This Southern dessert begins with a thick cake batter. Once the batter is in the pan or oven-safe dish, gently spoon boiling water over the top. The water and batter blend while baking to form the pudding layer. Try Hot Fudge Brownie Cake capped with a fluff of whipped cream or Apple Pudding Cake flavored with apple juice, freshly chopped apples, and cinnamon. Serve warm, and enjoy.
Hot Fudge Brownie Cake
MAKES 8 SERVINGS; PREP: 15 MIN.,
BAKE: 45 MIN., COOL: 25 MIN.
1 cup all-purpose flour
2 Tbsp. unsweetened cocoa
2 tsp. baking powder
1/4 tsp. salt
11/4 cups granulated sugar, divided
1/2 cup milk, at room temperature
3 Tbsp. vegetable oil
1 tsp. vanilla extract
1/2 cup firmly packed light brown sugar
1/2 cup unsweetened cocoa
11/2 cups boiling water
Whipped cream or ice cream
1. Preheat oven to 350°. Stir together flour, next 3 ingrethents, and 3/4 cup granulated sugar in a large bowl; stir in milk, oil, and vanilla. Spread batter in a lightly greased 8-inch square pan.
2. Combine brown sugar, cocoa, and remaining 1/2 cup granulated sugar in a small bowl; sprinkle over batter in pan. Using a spoon, gently drizzle 11/2 cups boiling water over batter, being careful not to disturb layers. (Do not stir.)
3. Bake at 350° for 45 minutes or until a cake layer forms on top and layer springs back when touched. Let cool on a wire rack 25 minutes. Serve warm with whipped cream or ice cream.
Chocolate-Cherry Pudding Cake: Thaw 1 (12-oz.) package frozen dark, sweet, pitted cherries; drain. Pat cherries dry with paper toweh. Prepare recipe as directed through Step 2, gently sprinkling cherries over batter in pan. Proceed with recipe as directed.
Mocha Pudding Cake: Substitute hot freshly brewed coffee for boiling water. Proceed with recipe as directed.
Apple Pudding Cake
MAKES 8 SERVINGS; PREP: 20 MIN.,
BAKE: 30 MIN., COOL: 25 MIN.
1 medium-size Granny Smith apple, peeled, cored, and finely chopped
1 Tbsp. lemon juice
1/4 cup firmly packed light brown sugar _____
11/2 cups just-add-water pancake-andwaffte mix
1/2 cup granulated sugar
3/4 tsp. ground cinnamon
1/2 cup milk
3 Tbsp. butter, melted
1 tsp. vanilla extract
2 cups apple juice
Ice cream (optional)
1. Preheat oven to 350°. Toss chopped apples with lemon juice in a medium bowl. Add brown sugar, stirring well to coat.
2. Whisk together pancake-and-waffle mix, granulated sugar, and cinnamon in a medium bowl; stir in milk, butter, and vanilla. Fold apple mixture and any accumulated juices into batter. Spread into a lightly greased 8-inch square pan.
3. Microwave apple juice in a 2-cup glass measuring cup at HIGH 2 to 3 minutes or until boiling. Using a spoon, gently drizzle hot apple juice over batter in pan. (Some batter may float once juice is added.)
4. Bake at 350° for 30 to 35 minutes or until a cake layer forms on top and layer springs back when touched. Let cool on a wire rack 25 minutes. Serve warm with ice cream, if desired.
